The perfect frosting for most any cake
Yield: Makes 4-1/2 cups
2 | egg whites | ||

1 1/2 | cups | sugar | |

|||
dash of salt | |||

|||
1/3 | cup | water | |
|
|||
2 | teaspoons | light corn syrup | |
|
|||
1 | teaspoon | vanilla | |
|
Combine egg whites, sugar, salt, water and corn syrup in top of double boiler. Beat 1 minute or until thoroughly mixed.
Place over boiling water and beat constantly at high speed on electric mixer or with rotary beater for 7 minutes, until frosting will stand in stiff peaks; stir frosting up from bottom and sides of pan occasionally.
Remove from boiling water and pour at once into a large bowl. Add vanilla and beat 1 minute, until thick enough to spread.
Recipe yields enough frosting to cover two 8-inch cake rounds.
