8 | ounces | linguine, cooked following directions on the package | |

1 | Tablespoon | olive oil | |
|
|||
3 | cups | tomatoes, chopped | |
|
|||
1 | package | (10 ounce) frozen chopped spinach, thawed and squeezed dry | |
|
|||
1/2 | cup | green onion, chopped | |
|
|||
2 | cloves | garlic, chopped | |
|
|||
4 | ounces | feta cheese, crumbled | |
|
Cook linguine, drain and set aside.
In a large skillet, saute the tomatoes, spinach, onions and garlic in oil until tomatoes are softened; reduce heat.
Stir in feta; heat until warmed. Toss linguine with tomato mixture. Serve at once.
